Songyunze originated from the Zhengxing Garden of the famous chef Guan Zhengxing during the late Qing Dynasty's Xianfeng era, and then transitioned to the Rongyue Garden of the man known as the ‘Father of Modern Sichuan Cuisine,’ Lan Guangjian, followed by the recent successors Zhang Songyun, Wang Kaifa, and Zhang Yuanfu who have passed down traditional Sichuan culinary techniques; with over a century of master-apprentice transmission, their original intention was to ‘reproduce the mainstream form of high-end Sichuan dining from the Republic era,’ realizing a banquet style of traditional Chinese cuisine. As times change, former head chef Zhang Yuanfu once said: ‘What Songyunze wants to do is to restore past culinary skills and methods, and to make improvements that adapt to modern habits.’ This perfectly interprets the traditional Sichuan culinary framework of ‘One Dish One Style, A Hundred Dishes A Hundred Flavors,’ establishing its significant position in today’s Sichuan culinary scene.
